The founder, Shoemon Yokota, was trained at a sake wholesaler in Nihonbashi, Tokyo, and when he set up his own business, he named the sake after the place where he trained, with the thought that he should never forget his first love. It is very difficult to register the name of a place as a trademark today, so it is an extremely valuable trademark.
It has been a long time since I last tasted Sanzo. It is dry with a slight bitterness, but surprisingly easy to drink. The sweetness comes in later. Legs are hardly noticeable.
