February 22, 2023 Evening drinks at home. It's been a while since I've had sake with my parents. The first bottle is a Junmai Daiginjo from Shusen Eiko. The first bottle is a Junmai Daiginjo of Shusen Eiko, Hatsu Shibori, unfiltered raw sake. Every year It is a local brand that we always decide to drink I always decide to drink it every year. I got it the day after it went on sale. (It was the last one... 😅). (It was the last one 😅). The aroma is like yogurt. The aroma is like yogurt. Almost no bubbles. It has almost no bubbles (I can feel it slightly or not). (or maybe a slight sense of it). Aroma The sweetness is moderate and spreads to bitterness and umami. and then it quickly finishes. Fresh and tasty. and delicious. It is a sake that can be Japanese food.
