This is Sogen "Hachitan-Nishiki" Junmai Nama-shu!
We usually get Yamadanishiki, but the brewery ran out of stock 💦.
(I should have bought several bottles...(cry))
But this Hachitan-nishiki is also juicy and delicious!
It feels a little drier than Yamadanishiki!
(In a good way, it has a "rough" taste.)
(It has a "coarser" taste in a good sense.) So, as a food sake, I think this one is better than the other...
The glass was a good one with a thin, thin inokuchi.
You can feel the freshness that is typical of Sogen!
(We had it with puffer fish roe as a snack...)
