A gift from Kaze no Mori. I was thrilled with what an apt choice it was 😁.
I will have it with cold sake.
When I opened the bottle, I heard a powerful gas sound.
When poured into a glass, countless bubbles adhere to the glass.
The top aroma is like that of Japanese pears.
The color is clear and quite slightly yellowish.
The mouthfeel is firm and gaseous, stimulating the tongue.
The taste is very refreshing at first, with a muscat-like sweetness. After swallowing, a slight citrusy bitterness and acidity spread to the aftertaste, which quickly dissipates.
It is delicious because of its complexity, smoothly transitioning from a gaseous and slightly irritating taste to sweet, bitter, and acidic tastes.
I used to think that Kaze no Mori was better with low-polished rice, but 507 is also delicious 😋.
