Lactic acid bacteria from the aroma. Even when you drink it, it's acidic. I heard it is fermented by lactobacilli. They say they are searching for a new taste. I like it. I mean, I like it very much. It's delicious! It's a white wine, but I think it's good to have something like this... No, it's just plain delicious. Sake is amazing!
