We finally opened a bottle of the spring release of the "Nine Tails" series by Amataka, which we had been curious about for some time.
The "Kuo" series seems to be a challenge series, with a different theme each time, and this one was brewed with Gohyakumangoku rice grown in-house with a rice polishing ratio of 80%.
The aroma has a graininess to it, which heightens the sense of anticipation.
The mouthfeel has a gentle gasiness and a gentle umami spreading through the mouth, and the moderate bitterness tightens up the whole taste.
Sake with spreading umami makes you happy from the moment you drink it. ☺️
I would like to try "Tenryaka" as well 😊.
