I was curious about Shikai-O, which Shinsho-san had posted before, and bought it on a trip to Nagoya at the end of July. I had been planning to drink it when the weather turned cooler. It is a cold sake, room temperature, and warmed up to about 50 degrees Celsius. It has a calm and nourishing flavor. It is not flashy or heavy, but has a casual flavor. It is clean and tasty as if it were made with rice grown without pesticides, and even when heated, it does not fall apart, and the strength of the core of its subtle umami is gradually revealed, making it a good sake. I can't wait to enjoy this sake with yakitori👍.
