Junmai Ginjyo Once-fired Hajime Genshu.
The previous one was Aikame, but this time it's Kame-only. I just realized that it is labeled "Kame" because it is brewed with Kame-no-o! I just realized 😅.
The aroma is slightly melon?
When you put it in your mouth, it has a mild taste, sourness, astringency, and sweetness with a melon flavor. After that, a little bit of alkali taste comes.
As the temperature rises, the sweetness becomes the main flavor, and the astringency and the aftertaste of alcohol become less pronounced, and the umami is felt more strongly and gradually. That was my impression when I just opened it.
As the days go by, the taste becomes more mellow and mellow, and the smokiness and umami aftertaste after swallowing become stronger.
Personally, I think it is a good idea to drink it slowly and not finish it on the 5th day.
