Hayashi's Gohyakumangoku is now available, and I am enjoying it while having a hard time handling a bottle.
It has a slight color. The first touch on the tongue is gentle and fluffy. Gradually, the sweetness rises. It is full of umami, followed by sourness and a bit of bitterness, which gradually fades away.
Perhaps because it is at room temperature, it is sweeter than usual, but it is a delicious sake with a firm body of sweet and umami.
We enjoyed it with roast beef.
