Bought it yesterday, so it's open now! Differently designed from last year and a lot of fun!
The aroma is based on Yamadanishiki, so it has a dry and slightly sweet aroma. The taste is based on Yamadanishiki, so I thought it would be dry, but it is more acidic than I expected, with a touch of sweetness. The taste is similar to that of a beetle. It is a bit rounded, probably due to its long aging. Personally, I prefer the assemblage. I think it could be sweeter. But I'm sure it's delicious, so I'll keep rooting for you! Thank you!
