This is my first Harukaze. Since I suddenly drink from Junmai Ginjo with No. 6 yeast, I will make an official judgment of this brewery's sake after drinking other kinds, and this one is delicious but hard to describe its characteristics. It has a modest ginjo aroma, not too much floral sweetness, a delicious balance of acidity and rice flavor with a slight effervescence, and a classical, habitual aftertaste that is unique and not found in trendy modern sake. Naturally, it has a different taste from Shinmasa. When I compared it with a bottle of Shoki Black that I had at home, the strength and balance of the umami became even more pronounced. At Mekada.
