Enjoying delicious sake with the brewer 2025⑧. The booth of Raifuku. The company is one of the medium-sized producers in Ibaraki Prefecture. The brewer, who was very brisk and high-spirited, was ready to help us. ◉Shinmai Ginjo Junmai Ginjo Unfiltered This is a brand that is rarely offered in the Kansai region. It is not a local brand, and the production is small. The Jun Dai, Jun Gin, Toku Jun, and Junmai are each brewed in about one tank. It is full of umami and has a strong flavor. It is easy to drink and suitable as a mid-meal drink. ◉Raifuku MELLOW Nama Sake A beautifully sweet sake with a dessert wine-like taste. It has a dessert wine-like taste and can be served with carbonated water. It can also be carbonated. The older guys were drinking a lot of it, saying it was delicious. ◉Raifuku Junmai-shu Hachitan-nishiki A clean, crisp sake with a sharp aftertaste. It's a bit on the dry side, but not too dry. Raifuku X [Black A very strong sake, with a full-bodied taste. It has a richness to it as well. I asked if it was the same brewing process every year, and was told that it probably is. The contents are not disclosed, so they don't know exactly what it is. ◉Raifuku Junmai-shu Wakamizu Sweet Nama-shu Mild, sweet and tasty, with a hint of acidity. It's my favorite sake of the bunch. The variety of sake rice used is one of the best in Japan, and they also use flower yeast, so there are many varieties to choose from.
