I felt a slight vinegar-like acidity and thought it might be a sharp sake, but it is also mellow, resulting in a strange sense of cohesion. The nuance is similar to that of white wine.
I preferred another Niida I once had at a sushi restaurant, but this one is also good.
I enjoy low-polished sake more because it has more individuality.
