When served warm, you can understand why it is called "matured dry" with its peculiar flavor and sharpness. It is said to go well with ramen... but it certainly has a peculiar flavor that is as strong as the thicker ramen of today. It does not seem to go well with light and clear flavored ramen, so I think it would be better to match it with the brewing style brewed here.
