Yuki no Bijin Autumn Shiboritate Nama Sake Junmai Ginjo 50% 15% 720ml 1760yen At the end of last year, I received a bottle of sake from a friend in Akita. As the name suggests, this sake was pressed in autumn, not hiyaoroshi. This is the strength of being able to brew in all four seasons. It has a nice crispness and gas. The freshness of the sake, as if it had 4 or 5 drops of orange and green apple in it, is very refreshing and defies the expectation of an autumn label. The yeast is brewed in the brewery and is called "Kanazawa yeast" (brewery culture No. 14), but does that mean it is cultured in the brewery? I wonder what happened to the yeast after the disaster. The koji room also seems to have been soaked, and I wonder when it will be restored. I would like to drink good sake again. I am glad to hear that the paisans in Akita are safe.
