When I was looking for a fruity unpasteurized sake, I was introduced to the unusual olive yeast, and since my wife's parents live in Kagawa, I bought it. I bought it from my wife's family in Kagawa. Today, the first day, the smell is subdued, but it has a very strong acidity, a mild koji aroma, a yogurt-like aftertaste, and a characteristic aroma that goes through the nose. It is a freshly opened sake and has a bit of a bitter taste, but we look forward to seeing how the taste changes from tomorrow.
