Brewed with "Gohyakumangoku", a rice suitable for sake brewing produced in Shimane Prefecture, this junmai is full of rice flavor and is aged slowly in a low-temperature cellar over the course of a summer. This hiyaoroshi has just the right amount of umami and a soft and gentle flavor, made with the ultra-soft water unique to Gassan. The acidity is refreshingly light.
