All Yamada Nishiki, unfiltered raw only at this time of the year. ✌️
It is sweet from the top aroma, and is actually more fruity and sweet-tasting than one might imagine.
It has a fresh, slightly effervescent feel typical of nama-shu, and the sweetness and powerful umami in the attack, combined with the smooth acidity in the finish, make it easy to drink and simply delicious😍.
I first encountered Kaiun about 10 years ago when I was not yet hooked on sake, when I paired it with sushi at a sushi restaurant in Ito and it was amazingly delicious 😁.
It's a brand I remember and I still want to drink it regularly 😊.
