I heard it is brewed with wine yeast. Perhaps that is why it has a gorgeous flavor with a hint of acidity.
However, it also has a strong sake flavor, just like a shochu Daiyame. It is a good variant of sake.
I had it with a Japanese food course when I was on vacation, and it tasted fresh.
I think it is good to aim for this and match it with a proper understanding of its taste.
