With the end of the year approaching, the opening rate of Shinsei is getting higher lol.
Well, this time it's Flax Cat Spark. I really love this white malted rice sake, and it is one of my top 5 sakes from Shinsei.
It is a very carefully crafted sparkling sake with delicate bubbles and a great balance between the fruity taste of the No. 6 yeast and the acidity of the white malted rice that does not disappear.
I think I might like it better than the normal Flax Cat.
It is a sake that I have not had much luck with among the Shinmasa brands, and although I let it sit for about half a year, I am glad that I was able to enjoy it before it lost its deliciousness!
I hope to have another chance to try it next time.
Shinmasa, I hear that you produce a lot of sake, but there are so many varieties that I don't think the amount of sake produced per variety is keeping up with demand...
I wish you would hold events not only in Kanto but also in Kansai...
I hope and pray for the next opportunity to meet you and Flaxcat Spark...
