I had too high expectations for this sake and even took it with me on my trip 😂.
This is one of Houou Mita's most popular and apparently sells out quickly. It's a wine yeast x sparkling sake, which is certainly intriguing 🍾 In addition, the 55% polished Yamadanishiki rice from the Nishiwaki district of Hyogo Prefecture, the sparkling method of secondary fermentation in the bottle, and the cosiness that is typical of Kobayashi Shuzo are very attractive ✨.
Even though the bubbles are second fermentation in bottle, they are not as powerful as those of Champagne, but they do have a delicate and silky sensation.
It has a green apple-like top nose, and the taste is less umami than other Hououmida wines, and the acidity and bubbles are refreshing. Although it is made with wine yeast, it does not taste like white wine.
It has a slightly bitter aftertaste with a short aftertaste.
It is very easy to drink and tastes good cosmetically, but the wine yeast x sparkling flavor makes you wonder if it is a very new taste. I feel that it is not beyond the boundaries of sparkling sake, and I personally feel it is a bit lacking (my expectations are too high) 🤔.
I think we should not have strange preconceptions, but rather have a sense of expanding the range of ways to enjoy sake 😄.
