It's a Junmai Daiginjo in terms of specifications, but they want people to drink it without any preconceptions, so they don't disclose the rice polishing ratio. It is a raw sake, so it is fruity on the palate, but it goes down nicely. There is no excessive acidity, bitterness, or alcohol. It is a pleasant sake.
