Purchased during a trip to Shizuoka.
Slightly more expensive because it was purchased at the Well Season Hamanako store. (I had done some preliminary research on local sake before the trip and was going to buy some lol)
300 ml for 780 yen including tax.
Polishing ratio 60%.
It is said to be sake made with white wine yeast (Burgundy yeast). The black bottle with a directly printed label is also very stylish. Expectations are high.
First of all, the smell was gorgeous. The aroma reminded me of white wine.
Then, when I put it in my mouth, it was very much like a white wine! But it is definitely sake!
It has a moderate acidity, a slight astringency at the end (in a good way), and a sense of alcohol.
I made a carpaccio of sea bream with it, and it went well with it. It went with everything. (According to the official recipe, it was made as a food wine. (According to the official description, it was made as a food wine.)
I bought a bottle of Abyss sparkling as well to compare, so I'll be drinking it right after this post!
Of course, it's my favorite!
I found it not only at a local sake shop but also at a local supermarket.
If you are ever in Shizuoka, you should definitely try it!
