I got the Ardbeg anamorphic and I was cheating for a while (whispering).
So, it's been a while since I've had a sake, but this is a kijoshu.
It seems that the brewing water (brewing sake?) is made from the raw sake of the sake brewing process. The taste is very complex, rich, and delicious.
It is naturally sweet because it is a kijoshu, but it also has a moderate acidity, so it is not too sweet, and yet it has a rich and complex flavor that is difficult to describe.
It has a deep, rich, complex umami flavor that is difficult to describe. It is a perfect example of a sweet and tasty sake.
