Twenty-eight breweries in Akita Prefecture are participating in the Akita Tour Ginjo 2022. This sake is brewed using only local rice (at least 50% Akita rice), water, and koji. It is quite mild. The acidity is 2.1, but it is not that sour. It has a slight tanginess when swallowed. The alcohol content is 15%, so it is quite refreshing.
