Summer sake has been arriving one after another, and I wanted to drink a strong sake, so I chose Gikyo.
It is made from 100% Yamadanishiki from the special A district of Tojo, Hyogo Prefecture, and has a rich, fine rice sweetness and umami flavor. Combined with a moderate bitterness, it is a very satisfying bottle. It is also a great match for dumplings.
