The initial tanginess on the tip of the tongue was fresh, perhaps due to the mention of carbon dioxide gas. It was a little bit sweet, like a trompe l'oeil. There was also a bit of bitterness after the sweetness. I drank it with sashimi, but I preferred it with red tuna rather than white tuna.
