I bought the regular version of the Hiran Nikomaru because it was on sale. I got the Queen first and enjoyed it, so the more affordable standard sake is great for my wallet 😄.
Melon-like aroma 🍈.
It has a sweetness on the palate that makes it easy to get into, but it has just the right amount of umami and acidity to keep it from being too extremely modern. The nose is fruity with a hint of bitterness in the finish.
There is some bitterness in the aftertaste, but it is not bothersome.
The brewer wanted to use Nagasaki Prefecture's original rice and came up with Nikkomaru, which is edible rice. I had the impression that sake made with edible rice would have a cloying taste, but this Tobiran was so elegant and delicious on the palate that it was hard to believe that edible rice was used as the base rice 😊.
