The aroma is mildly sweet, with a hint of ginjo-like sweetness in the mouth. You can taste the sourness and umami that is typical of Yamahai, even though the mouthfeel is smooth. In the aftertaste, a refreshing bitterness that is typical of Niyu induces a sharp finish.
If you like Junmai Yamahai, you may want a little more acidity, body, and richness, but if you like Niyu's standard, it's easy to drink even if you don't like Yamahai! It is a delicious sake that is easy to drink even with Yamahai.
