Upon investigation, one finds that Nichinichi Jozo is a new brewery built in Kyoto by renowned toji (master brewer) HIDEHIKO MATSUMOTO. The rice used for this sake is of course Yamadanishiki from Hyogo Prefecture. This sake is brewed using rice that is inseparable from Toji Matsumoto.
When poured into a glass, it has a mild but sweet aroma like a pear. The first sensation of drinking this sake is a tingling, gassy feeling...but the light mouthfeel and pleasant fruity aroma are pleasant. The aftertaste is quite fine, with acidity, sweetness, and bitterness simultaneously complementing each other pleasantly in the mouth. This sake is also delicious.
