I drank for the first time "Tatobi" from Nakashimaya Shuzo in Yamaguchi, Japan. 600 four-pack bottles were made in the first year of production, 2024. We received a rare bottle. We opened the bottle. The rice polishing ratio is undisclosed, but the sake is full of flavor, with a slight effervescence and a clear, clean acidity and umami flavor. In addition to sashimi, it tastes like it would go well with Japanese food with dashi broth. A bottle that raised my expectations for new sake encounters to be produced in the future. Delicious: ‼️

Hi Takatsugu 😃 I've never seen this sake before! I googled 😅Tatobi means the scenery of the Seto Inland Sea with its beautiful islands 🥹. I love the beautiful acidity and flavor 😍I'm very curious 🤗.
