Shiromiki" sounds like a happy occasion, so we opened the bottle just before New Year's? I opened the bottle before the New Year's holiday. The liquor store threatened me a lot, but I was able to open the bottle without blowing it. But it got mixed in with the other bottles. The aroma is faintly koji and sweet. When you drink it, you are struck by the sweetness of the rice and the acidity of the koji. The bitter taste is quite strong at the end. The next day, drink the supernatant that could not be drunk when the bottle was opened. The aroma is sweet? koji, tangerine 🍊-like sweet acidity. When you drink it, it has a fluffy sweetness, a relatively clean umami, and finishes with acidity and bitterness. After mixing, the flavor becomes more intense, and the rice is sweet and tasty. It is an active nigori! I tried heating it up. The aroma is of rice, sweet sake, and koji-like acidity. When heated, it is rather sweet. It's like amazake with sweetness and sourness. It's a bit like drinking nigori sake at random this time of year, but it has its own character and is delicious.
