Cold sake
As the name implies, it has an aroma of pure rice.
Drink it. The water is light and fruity. A hint of loquat. Since it's 14% alcohol, I finished the first bottle in a minute and a half. Anyway, it is easy to drink. Slight accent of bitterness on the tongue as you swallow.

The sourness stands up fluently. Pale and sweet rice at the back.
Drink it. The bitterness and the thickness stand out at once. At the same time, it is fragrant like burning dry lumber. The acidity is low. When you swallow, the bitterness and astringency that tighten the whole mouth.
55°C
It becomes clear at once. The milky taste that is almost melted in the back is the taste of mom.
Drink it. It is light and fragrant. It is sweet and savory like roasted dry sugar cane. Dracula 6's dreamy drop feeling. When I swallowed, the tip of my tongue was numb. Looks more bitter and astringent than it feels.

Plump sweet dew candy. Boiled soy sauce aroma. Sour aroma.
Drinking. Nuance of soy sauce. Sense of saltiness. Numbness at the tip of the tongue, fullness and bitterness felt at the base of the tongue. It has elements in common with salted sansho nuts. When you swallow it, you feel tame soy sauce.
At 65 degrees Celsius, there are many people who like it and dislike it, but at 55 degrees Celsius or lower, it can be enjoyed by everyone. Personally, I prefer the flow of 55 degrees from cold sake.
