The new sake season is coming and I need to save some space in my fridge.
Another Yonotori that came out around the same time as Yonotori 10th Anniversary.
The 10th anniversary one is a sparkling sake made by a clear process, but this one is a nigori sake made by adding lees and secondary fermentation.
I was careful to open the bottle, but it opened normally even after a little mixing.
The gas pressure of the latest Shinsei is considered to be Tenkaeru bottle>Champagne cork>Beer crown.
The aroma is a little milky, lactic acid, and pear-like, which is common in nigori sake.
It seems sweeter than Yonotori Spark, but not as sweet as Yonotori 10th Anniversary without the caramelized taste.
The taste is quite rich, with the sweetness of nigori sake added to the sweetness that is typical of Yonotori.
The acidity is less pronounced than regular Yonotori, but there is a slight bitterness from the lees instead, so the overall balance is maintained.
A simple yet delicious sake reminiscent of the Shinmasa of four or five years ago.
