The cold wave has returned, so we've been drinking hot sake.
When I drank it cold, I felt the alcohol was too stimulating, so I saved it for heating.
When heated, it becomes milder and has a nice acidity that goes well with food.
As it cooled down, the sourness disappeared and the sweetness came out. I prefer it at a higher temperature.
