3. a test brew of Kaze no Mori. It has a gorgeous mouthfeel, but it quickly becomes dry and does not linger. It is not too sweet and has a crisp taste that is hard to believe it is made with 90% polished rice. The acidity is strong and bubbly, making it refreshing to drink. Junmai sake, unfiltered, unpasteurized, 90%, about 1800 yen, Otsuka Sake Shop in Honmachi.
