Hokosugi no Yamahai Shibori-shikkomi Junmai

A delicious one. Gentle acidity, a hint of sweetness, and moderately assertive alcohol are overall gently saturated and well balanced.
The very slight yogurt-like acidity is probably lactic acidity from natural lactic acid bacteria.
The flavor is rather firm, but nice and round and gentle.
It is delicious and recommended.
