This year's first Hiyoroshi is Hououmida Hiyoroshi Junmai Ginjo-shu, a limited edition sake made from 100% Yamadanishiki produced in Hyogo Prefecture.
This sake is a traditional sake that is pressed in the winter, matured during the summer, and shipped in the fall, giving it a mellow and matured taste.
It has a mild aroma, smooth texture, gentle acidity, and a firm yet mellow flavor.
The acidity is tangy even from the mid-palate, and a light sweetness spreads in the mouth.
Aged for one summer, it is both fresh and mellow.
We drank it with grilled high priced Sanma (mackerel), which is an autumn food. It was delicious!
