It's been a while since I've had Hououmita. I wanted to drink Tochigi sake, and when I was wondering about Senkou, I was recommended that the best one was Hououmida, so I bought it. It was the right answer. The acidity is moderate, and the sweetness and umami are a little strong. There is no unpleasant smell and bitterness at all. It may be recommended for the beard judge.
