Speaking of Kafuda, I had my first bottle of Dewa Sanzu at a sake bar in Fukuoka, and I still remember how sweet and delicious it was. My favorite liquor store started selling it, so I bought my first bottle.
The aroma is a little bit bitter and alcoholic, but it smells like green apples and green melons. High expectations.
The water color is clear and clean.
A little sourness comes in the mouth, but soon the melon-like sweetness spreads, and then the whole taste is rounded up as if to turn them over, and the sourness remains on the tongue a little.
The aftertaste and lingering aftertaste disappears in a swoosh, leaving the mouth feeling refreshed. It has a completely different atmosphere from Dewa Tsannzu or Nama-shu.
It has a sweetness, but it is also light and refreshing, and it shows a glimpse of Kamonishiki's ability as a brewery.
This is a very good sake for a meal. It matches well with oily dishes such as Chinese food.
It overturned the notion that katsufuda means only sweet sake. I hope to see more variety from the brewery in the future.
