This is the third and most important classic of the Edo Return. Kai of SakeLab also mentioned it as one of the most delicious sakes of the year, so I was really looking forward to it.
No, lol, it's so good it's laughable lol.
I have had many fresh sakes that are directly pumped, but this is the first time I have had a sake that is so fresh, with the yeast still alive, and with a sense of shwashiness lol.
It has the usual citrusy taste that is typical of Senkou, but the taste is not strong and is just the right amount of citrusy. It has just the right amount of flavor with no added yeast, i.e., brewer's yeast. It has a very good balance of acidity, shwashiness, and citrusy flavor.
President Usui said it was his favorite sake to drink, and I agree.
I am looking forward to more classics in the future.
