It is a beautiful classic type. It goes perfectly with the gentle flavor of the grilled and soaked Shiho-chiku (bamboo shoots) served with the entrée. Shiho bamboo is a rare bamboo shoot that is a specialty of Kochi Prefecture and is harvested in autumn. Bamboo shoots in this season are unexpected and a little delightful.
