I'm going to open a second bottle of this one tonight because I don't want to waste my Collage 💁.
The second bottle is a Junmai Yamadanishiki 65 Fire 2024BY✨.
I think it's been a while since Nito-san has had a bottle. The name sounds like Tanaka Sixty-five 😆.
The aroma is not matured at all, but it has a strong matured aroma like caramel or tortoiseshell candy 😅 The taste also has a momentary acidity, but the sweetness of matured sake spreads and I was surprised that such a matured way of making sake was possible 😲. I think this sake is better to drink at room temperature or warmed up than cold sake. ☺️
In fact, when I warmed it up a little hot, the maturity disappeared and the rice flavor and acidity of junmai sake stood out, which is definitely my favorite flavor 😋.
I'm going to enjoy the oxidation and temperature over the next few days 🙌
