It has a calm sweet umami flavor with a hint of coarse grain and grain aroma, and although it is a honjozo sake, it has a nice spread of a slight chili flavor that is found in nama sake.
It has a slightly bitter aftertaste with a hint of woody aroma, and a rather strong acidity that hits the tongue and the back of the throat. It was a slightly spicy, rich and delicious sake that made me want to drink more 😙.
The third one is thick Niboshi Soba!
I was curious about the saltiness of the dish, assuming that I would be able to add a topping of niboshi or a double topping.
