Brewed by Tomikawa Shuzoten (founded in 1913), a long-established brewery in Yaita City, Tochigi Prefecture, Chuai Unfiltered Nama Sake embodies the brewery's philosophy: "Local sake is local food culture.
✳︎
The brewery uses limpid brewing water from the Shoninzawa spring system, selected as one of the 100 best waters in Japan, and locally grown sake rice that the brewery itself cultivates. The sake is unpasteurized, without any filtration or heat treatment, so you can feel the vitality of the rice and the breath of the fermentation process.
✳︎
The nose has a gorgeous ginjo aroma reminiscent of melon and pear. In the mouth, freshly squeezed acidity spreads, followed by the umami of rice and a hint of sweetness.
✳︎
The aftertaste is crisp, making it an excellent food sake. It is an evolution of the original local sake, a blend of nature and craftsmanship.
