Dewazakura Yamahai.
The lingering, damp, vat-like aroma characteristic of Dewazakura has not been my favorite since I was young, but thanks to the added complexity of flavor from Yamahai, I did not mind this one 😄.
The acidity is effective, but the umami is clean and not harsh. Good sharpness.
