Brewing sake with rice from the coast of Fukushima while renting a sake brewery
Tetsuyuki Tachikawa, the former head brewer of "haccoba", a craft sake brewery, started up the brewery.
The rice used is Koshihikari rice with a milling ratio of 90🌾!
But it's still a solid sake!
From a full-bodied sweetness, it finishes with acidity.
I look forward to their craft sake using hops and their own brewery in the future.
