I compared Sharaku and Yui Yui's Akaban Omachi. 😄
It has a faint aroma of smoked banana. The aroma is stronger than Sharaku. When you drink it, you can feel the richness and umami, but there is also a refreshing sweetness and a bitter aftertaste.
The flavors are similar in some aspects, perhaps because they are made from the same rice, but Yui Yui is more assertive, fuller, and rounder overall, perhaps due to the difference between Junmai Ginjo and Tokubetsu Junmai.
I paired it with Okayama-grown octopus and wakamegi nuta. The acidity of the miso and vinegar enhances the sweetness, richness, and umami of the Yui Yui. It is a great match. Maybe the octopus itself is delicious to begin with 🐙. I'm sure it is delicious 😁.
Sake rice used: 100% Akaban Omachi rice produced in Okayama Prefecture.
