The unique taste of Kame-no-o.
Very fresh and lightly effervescent. Western pear? Japanese pear? Grapefruit? In the middle of the fruity flavors like pears, grapefruit, cocoa, and coffee, there is a bitter aftertaste that gradually leads to a bitter aftertaste. I thought the body was rather light, but the sweetness, acidity, and umami came out with the passage of time. Yamadanishiki is used for the koji rice. I feel that it supports the characteristics of Kame-no-o in a refreshing and slightly gorgeous way.
I like it a lot. But I don't think I'll be looking for too many snacks ^^;
