Purchased in Tokamachi. I enjoyed this unfiltered, unpasteurized sake as soon as I got home. Fresh flavor. It is a light and refreshing cloudy sake, as is typical of Niigata.
Boiled and boiled wild udo (udo is a kind of fish). Firefly squid and oysters simmered with sansho (Japanese pepper). Delicious. Butterbur miso and shiso leaf miso.
They are very good.
